Garlic Cheddar Biscuits

If you love garlic or warding off vampires, these light, fluffy and tasty biscuits are for you!
These are a little like the Cheddar Bay Biscuits that you can get at Red Lobster.

Makes 12 biscuits.
Ingredients:
  • 2 cups Bisquick or similar baking mix
  • 1/2 cup shredded cheddar cheese
  • 4 TBSP cold butter or margarine
  • 2/3 cup milk
  • 1/2 tsp minced garlic (or 1 clove fresh)
Topping for biscuits:
  • 2 TBSP butter or margarine
  • 1/4 tsp dried cilantro or parsley
  • 1/2 tsp minced garlic

Preheat oven to 400 degrees. Put baking mix in a bowl. Use a grater and grate the butter into the bowl and mix together until will distributed. The butter does not have to cut in completely - having little bits of butter in the batter helps to make it fluffy.

Add milk, garlic and cheese.

Mix until well blended and dough balls up in the center of the bowl.

Drop by tablespoon on to a greased baking sheet. 15-17 minutes and remove from oven.

Put the topping ingredients into a microwave safe bowl for about a minute to melt the butter. Remove from the microwave and mix the ingredients together.

Brush or spoon the topping mixture on top of each biscuit and serve.

PIGS IN A BLANKET

My Mom used to make these all the time when I was a kid and it was one of my favorites for lunch. It is quick and easy to make. Items used:
  • 1 pkg. of 8 Hot Dogs
  • 1 tube of 8 pre-packaged Large biscuits
  • 4 slices of cheese
  • Mustard

Cut the hot dogs horizontally almost all the way through, but not quite.

Slice or tear each piece of cheese into 4 strips for each slice and put them in the center of the hotdogs.

Add mustard to the center of the hotdogs. Flatten out a biscuits and wrap it around the hotdog.

Pinch the edges of the biscuit "blanket" shut and bake according to the directions on the biscuit package.

SOUR CREAM DROP BISCUITS

I made these this past Thursday for our Valentine's dinner along with homemade mashed potatoes and gravy and they were a big hit. They are quick and simple (there are only 3 ingredients) to make and easy enough that children that are learning to cook could easily due (with supervison of course) to build their skills and confidence.
The biscuits are based on a recipe by Vicki in AZ at recipezaar.
2 cups Bisquick 1/2 cup butter, melted 1 cup sour cream
- Preheat oven to 350.
Put margarine in oven safe bowl then put int he oven for a few minutes
Consistency of the melted butter - slushy but not all the way melted.
Add 2 cups Bisquick
Add 1 cup of sour cream
Mix until blended - will look like this
Drop by tablespoon full on the baking sheet or baking pan
Bake for 12-15 mins.
