Cake Mix Jello Cookies

Combine two favorite desserts into one fun quick and easy treat!

 I had seen this recipe for Jello cookies but decided to try a quicker and easier route.  They turned out a bit heavier than regular cookies but still tasted light and cakey with a slight taste of the Jello flavor (this is the 2nd batch; the first one was devoured before I was able to take pictures of them).

In choosing a cake mix, consider the Jello flavor you want to combine it with and the color of cookies you want to try to achieve.  For the above I used yellow cake, orange Jello and orange juice.  For my first batch I used a white cake mix, blue Jello and water and they came out a lovely light blue color, but less flavor so I used juice in this batch.

Recipe:
  • 1 box cake mix
  • 1 3oz package of Jello
  • 1 egg
  • 1/4 cup oil
  • 1/4 juice or water
  • Baking parchment paper or non-stick coating spray.
Preheat the oven to 350 degrees.   Line a cookie baking tray with baking parchment paper or spray with non-stick coating.

Mix all ingredients, drop by heaping tablespoons onto cookie sheet and bake 8-15 minutes.

The size of your "heaping tablespoons" determines how many cookies you end up with, but I ended up with 24 using smaller (baking 10 minutes) and 18 using huge tablespoons (baking 15 minutes).

Triple Cocktail Jello Brain



















This yummy and jiggly treat was made using the new cocktail flavors that Jello has out on the market layered in a brain mold.

It is also the same colors of the Italian Flag, so you could say it is an Italian Triple Cocktail Brain. (Dissected "Brain" on a plate, pictured left.)
 
This is a non-alcohol version, but you could substitute tequila in the margaritas and rum in the Pina Colada for the cold water used in this recipe instead.


Items used:
  • Brain mold ((Kraft Foods has for sale here)
  • 1 3oz box Margarita  Jello
  • 1 3oz box Pina Colada Jello
  • 1 3oz box Strawberry Margarita Jello 
  • Measuring Cups & Mixing Spoon
  • Water and method to boil it
  • Small Mixing bowl
  • Large bowl 
  • Serving plate
  • Butter Knife
Pour Margarita Jello in small mixing bowl.  Boil 3/4 cup of water and stir into the jello until dissolved.  Add 1/2 cup cold water.

Pour into Brain mold and allow to set (I left it in for 2 hours).








Pour Pina Colada Jello in small mixing bowl.  Boil 3/4 cup of water and stir into the jello until dissolved.  Add 1/2 cup cold water.

Pour into Brain mold on top of the Margarita layer and allow to set (I left it in for 2 hours).








Pour Jello in small mixing bowl.  Boil 3/4 cup of water and stir into the jello until dissolved.  Add 1/2 cup cold water.

Pour into Brain mold on top of Margarita and Pina Colada layer and allow to set (I left it in for 2 hours).





Once set, pour warm water in the large bowl, just enough to come up below the rim of the mold and then run butter knife under warm water and run it around the edges to loosen.

Remove from bowl and place serving plate on top of the mold.








Hold the edges of the mold and the plate and flip the mold over to remove the brain.

SpongeBob and Friends Dessert

This is for Day 9 of 30 Days of Creativity with a theme of "Water".  I chose to used blue jello and SpongeBob Gummy snacks to try to create and undersea dessert adventure.  

I have seen this idea on other sites, but they usually call for putting the Jello and gummy snacks in layers and I just inserted after the Jello set instead.


As the jello is a bit cloudy, it is hard to make out exactly what the shapes are, but it tasted good nonetheless.  It made 2 8 oz servings.

Items used:
  • Small package blue jello
  • 2 cups Water
  • SpongeBob Gummy Snacks
  • 2 8 oz clear glasses
  • Butter Knife
Make the Jello according to the package, put a SpongeBob gummy at the bottom and then poured the Jello in the glasses and allow to set.





Once the Jello was set, I used a butter knife to create an opening in the Jello and then inserted the gummy snack.

JELLO CAKE VERSION - TROPICAL CAKE WITH ORANGE CREAM FROSTING

This is a version of the following Jello cake that I posted previously.
With the summer days being hot, we were in the mood for something tropical and this hit the spot.
I used a lemon cake mix and used orange juice instead of water and baked according to the directions on the box then allowed the cake to cool then poked holes in the top with a fork.
I then used a small box of Tropical Fruit jello and 1 cup of boiling water, mixed it together then poured over the cake.
For the frosting, I used 1 8oz tub of whipped topping, 1 cup powdered sugar and 1 cup of orange juice.

Lime Koolaid Cake with Whipped Jello Frosting

***Featured on Cut Out and Keep**** ***************************************** This is a novelty cake from a store bought mix to serve after a spicy meal and it is a little tart and not too sweet and fun for kids to make as it uses two all time kid favorites - Koolaid and Jello! Cake:
  • 1 box of store bought cake (white or yellow) and whatever ingredients the mix calls for (mine called for 3 eggs, 1/3 cup oil and 1/1/4 cup of milk)
  • 1 pkg Lemon-Lime Koolaid
  • Green food coloring (optional)
  • Non-cooking food spray (spray the pan you are going to bake the cake in)
Mix the cake according to the directions on the package, then add one packet of Koolade and stir in. Add 5-10 drops of green food coloring if you want it to be a little more green. Mix in food coloring and pour into cake pan(s) and bake according to the directions on the package. Allow cake to cook before frosting. Frosting:
  • 1 8 oz. tub of Cool Whip or other whipped topping
  • 1 small pkg. Lime Jello
  • 1 cup confectioner's sugar
  • 2 TBSP milk
  • Add the whipped topping, jello and powdered sugar and mix together.

Slowly add the 2 TBSP of milk. Frost the cake and store in the refridgerator for at least 30 mins before serving to allow the frosting to set up.

Peach Jello Cake With Whipped Peach Frosting

I am rotating my canned goods and ran across several cans of peaches that I want to use up and went in search of receipes and found one for a Peach Whipped Cream Frosting Recipe at http://www.cupcakeproject.com/2009/05/whipped-cream-frosting-with-peaches.html and it ended up being the inspiration for this cake, even though I didn't actually use it.
When I was at the grocery I noticed that Jello now makes Peach flavored Jello and decided to try making a Peach Jello Cake with Peach Whipped Frosting. While it did not turn out as pretty as I had hoped as there was not a lot contrast between the cake, the jello and the frosting, it was great for a hot afternoon as it was light and fresh with just a hint of peach flavor.

Ingredients:

  • 1 can of peaches (15-16 oz can)
  • 1 box of white cake mix and whatever ingredients that mix calls for usually eggs, water or milk and margarine except reduce the amount of liquid used by 2/3 of a cup.
  • 1 small box of Peach Jello
  • 1 oz tub light whipped topping, thawed
  • 1/4 cup of confectioner's (powdered) sugar
  • Pam or other non-stick cooking spray
  • 1 TSBP flour (optional)

Grease and flour an 9x13 baking pan - I sprayed the pan with Pam - you would flour the pan if you are going to do so at this point.

First, prepare the cake mix according to the instruction on the box, minus 2/3 cup of the liquid.

Next, puree the peaches in a food processor or blender (I put the juice from the can in with the peaches) then measure out 2/3 of a cup and set it aside and put in the fridge for the frosting. Pour what is left in the rest of the puree into the cake mix batter. Pour the batter into the cake pan and bake according the directions on the box mix

When the cake is done, remove it from the oven and allow to set a few minutes and in the meantime, prepare the jello according to the package (1 cup boiling water until Jello is dissolved, then add 1 cup cold water and stir in).

Poke holes in the cake with a folk all over spaced about 2 inches apart, then slowly put the Jello over all of the holes until and continue to pour until the entire mixture is used, then put in the fridge for 1 hour.

Mix the light whipped topping with the 1/4 cup of confectioner's sugar and the 2/3 cup of peach puree set aside in the fridge earlier.

Frost the cooled cake with the whipped frosting mixture and put in the fridge for at least 1 hour (but best if it can set overnight) before serving.

RAINBOW JELLY JIGGLES


I made this to try to make St. Patrick's Day cheery and it was a pleasant surprise for Marv when I took a plastic container with two rainbows into the hospital in a clear plastic container and he said they were really good. Kyle liked them too, so double bonus points and this will be something I will make again in the future. This is not project that can be done at the last minute - you need to start at least a day in advance due to the 3 hour setting time between layers in the fridge. The basic recipe for Jigglers from the back of the box of Jello is: Stir 2 1/2 cups of boiling water (DO NOT ADD COLD WATER)into a 4 - 4 serving each size (3 oz box) and stir until dissolved. As these are being layered, and depending on the width you want the finished rainbows to be you could cut the recipe:

  • In half: 1 1/4 cup of boiling water and 2 small boxes or 1 large box for each layer
or
  • Into 1/4: Use 5/8 cup of boiling water and 1 small box for each layer
At Walgreens, I was able to get Royal Gelatin in Red, Green and Orange for 3 small boxes for $1. However, they didn't have yellow, blue or orange nor did the store brand. I ended up buying a small box each of yellow and blue Jello gelatin. For the purple I mixed a red box with a green box of Royal gelatin and added 10 drops of blue food coloring.
XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX Work in Progress notes: I wanted to make something festive and different for St. Patrick's Day and put Rainbow Jello on my "Stuff to Make" list http://www.blogger.com/post-edit.g?logID=4451942305961742610&postID=4354616552539693420 and I decided to go with Jelly Jigglers instead of regular Jello Rainbow. The actual mixing the boiled water takes less than a minute - it is the set time of 3 hrs between layers which is what takes so long. As they had Royal Gelatin on sale a Walgreens this week 5/$1 with coupon, I am going to try to make due with the flavors/colors available, which was red, green and orange and use food coloring to tint the rest of the colors.
I started out with a box of Jello that I had and a box of Royal gelatin and reduced the water on each by 1/2 cup, boiled the water and added it to the gelatin.
I used the cake topper from the cake that I bought and ate this weekend as I was depressed Kyle's Dad was in ICU at the hospital (don't judge me - Kyle did get one small piece) as a mold and poured the red gelatin in the mold.
I then placed it in the fridge overnight.
As I want the jigglers to be bite sized, it seems like two packages of each layer is going to make it too thick, so from here on out, decided to just make one package for each layer.
Mixed 1 1/2 cups boiling water in with the orange gelatin. Poured the orange gelatin in the mold on top of the red layer.
I next tried making the yellow layer with orange gelatin and yellow food coloring, but uh-oh - it turned it more of a darker orange than it did make it yellow.
Pour into the tray and put back in the fridge to chill for a few hours
If I leave it as is, my rainbow will be out of whack, or I could invest a few more dollars and go to the store and call what I have the red and orange layer and then add yellow, green, blue and purple (2 small or 1 large box) to make it look right, but still concerned it will be too thick for finger foods.
As I will not have time to mess around with this until after coming back from the hospital this evening, I will think about this a bit.
I ended up on a compromise and bought a small pkg of yellow (lemon) and one of blue (berry) Jello and will mix the green and red that I have on hand to make some shade of purple. I checking at my local grocery I have found that while many brands offer red, orange and green gelatin, only Jello carries blue, yellow and purple.
Add boiling water into 1 sm. pkg lemon jello.
Pour the mixture into the pan. After seeing this I was glad I went ahead and invested in the lemon Jello as the contrast is greater and it does look better. Put it in the fridge and forgot about it for a few hours.
Next was the lime green layer. Pour the mixture into the pan and let set for a few hours.
Next was the blue layer.
Pour the blue jello on top of the existing layers and put in the fridge for a few hours.
Now for the final layer - purple. I mixed 1 pkg of the Royal Strawberry with the 1 pkg of the Royal Lime, then added 10 drops of blue food coloring.
Pour into tray and let set for a few hours.
In reviewing the package of Jello, I may have added to much water for these to be jigglers as it indicated 2 1/2 cup boiling water to 4 small pkgs Jello and reducing the water by 1/2 cup might not be enough - and they may need to be refrigerated after all.
After last layer is firm, take out and cut the layers into circles with a cookie cutter or a cup (run the cup under warm water first). If you use a cup, this part would be super fun for kids as it makes a "thwack" when you pull the cup out and the layers slide back down in the pan.
Next, remove the circle of layers from the pan an put it on a plate, then cut it in two with a knife.
Set each piece upright and you have a rainbow!
